Influence of invertase activity and glycerol synthesis and retention on fermentation of media with a high sugar concentration by Saccharomyces cerevisiae

Article Abstract:

Invertase activity, and enhanced glycerol synthesis and retention is necessary for fermentation of media with high sugar concentration by Saccharomyces cerevisiae. Fermentation and intracellular glycerol activities are significantly related in high concentrations of sucrose medium. A high sugar concentration increases the ability of S. cerevisiae to produce and maintain glycerol. Glycerol and fermentation activities are unrelated under low sugar concentrations.

Combined effects of sulfites, temperature, and agitation time on production of glycerol in grape juice by Saccharomyces cerevisiea

Article Abstract:

The simultaneous effects of strain, agitation time, initial sulfite concentration and incubation temperature on glycerol synthesis by Saccharomyces cerevisiae were determined using analysis of variance. The results showed that a significant interaction exists between strain, incubation temperature and agitation time. Response surface methods were applied to determine the optimal conditions for glycerol synthesis.
