Real-time measuremenrts of the interaction between single cells of Listeria monocytogenes and nisin on a solid surface

Article Abstract:

Cells of Listeria monocytogenes that are attached to a substrate are more resistant to the bacteriocin nisin than cells that are free-floating. Nisin is of interest to the food industry because it can kill Listeria in food products.

Osmotic stress leads to decreased intracellular pH of listeria monoytogenes as determined by fluorescence ratio-imaging microscopy

Article Abstract:

Intracellular pH pH(sub i) of listeria monocytogenes is determined after exposure to NaCl or sorbitol in liquid and solid media (agar). The study demonstrates that the initial response of an osmotic shock caused by NaCl or sorbitol is a drop in pH(sub i).

Two subpopulations of Listeria monocytogenes occur at subinhibitory concentrations of leucocin 4010 and nisin

Article Abstract:

In situ analyses of single Listeria monocytogens cells at subinhibitory concentrations of leucocin 4010 and nisin revealed two subpopulations when measured by fluorescence ratio imaging microscopy (FRIM). The study thus highlights the important practical implications of applying subinhibitory concentrations of bacteriocins, which results in unaffected target cells which makes it suitable for use in food preservation.
