Scanning electron and light microscopic study of microbial succession on Bethlehem St. Nectaire cheese
Article Abstract:
The succession of microbial populations on the surface and subsurface of ripening St. Nectaire cheese were studied using scanning electron and light microscopy. The results showed that the initial population within the first four days of ripening is composed of filamentous fungi and yeast measuring 250 to 450 microns thick. From four days to two months, the rind gradually thickens as fungal hyphae penetrate into the curd. In addition, discrete pockets of lactic acid bacteria and yeast could be visualized throughout the curd. These results reflect a complex pattern of microbial development during the ripening process of St. Nectaire cheese.

Fiber-optic microarray for simultaneous detection of multiple harmful algal bloom species
Article Abstract:
A serious threat to coastal resources is posed by harmful algal blooms (HABs) as they can adversely impact public health, regional economies and ecosystems. A description of a sandwich hybridization assay that combines fiber-optic microarrays with oligonucleotide probes that can detect and enumerate the HAB species 'Alexandrium fundyense', 'Alexandrium ostenfeldii', and 'Pseudo-nitzschia australis' is presented.

Microarray analysis of microbial virulence factors

Oligonucleotide microchips are more accurate than gel electrophoresis for detecting microbial virulence factors. These microchips consist of a microarray of gene-specific oligonucleotide probes on a glass surface.
