Substrate selectivity and biochemical properties of 4-hydroxy- 2-keto-pentanoic acid aldolase from Escherichia coli

Article Abstract:

A study was conducted to determine 4-hydroxy-2-keto-pentanoic acid aldolase from Escherichia coli as a class I aldolase. The substrate selectivity for the reverse reaction was examined against the carbonyl donor pyruvic acid and the carbonyl acceptor acetaldehyde. Results indicated that the enzyme supported a high selectivity for the acetaldehyde acceptor. It also accepted alpha-ketobutyric acid or phenylpyruvic acid in place of the pyruvic acid carbonyl donor.

Research has been conducted on the membrane damage in Escherichia coli strains. The relationship between membrane damage and loss of viability following the pressure treatment has been investigated.
