Virulence factors of verocytotoxin-producing Escherichia coli isolated from raw meats

Article Abstract:

Samples of venison, beef and sheep meat were found to contain verocytotoxin-producing Escherichia coli (VTEC) as confirmed by polymerase chain reaction. A total of 2,440 raw meat samples were analyzed and VTEC was positive in as many as 4.6% of these samples. Although the proportion of infected meat is relatively large, only a minority of the contaminant organisms contains the virulence gene indicating that most VTEC contaminants are nonpathogenic.

Detection of Escherichia coli O157:H7 in meat by an enzyme-linked immunosorbent assay, EHEC-Tek

Article Abstract:

Examination of the presence of Escherichia coli O157:H7 in raw meats by an enzyme-linked immunosorbent assay (ELISA), EHEC-Tek, reveals the presence of target antigens of monoclonal antibody (MAb) 4E8C12 in various serotypes of E. coli. Culture conditions and sample preparation exert significant influence on the expression and detection of MAb4E8Cl2. A new procedure incorporating immunocapture improves the specificity of the ELISA.

Elimination of Escherichia coli O157:H7 in meats by gamma irradiation

Article Abstract:

The utilization of ionizing radiation for eliminating Escherichia coli O157:H7 in uncooked and raw meats was investigated. A mechanically deboned chicken meat was subjected to response-surface methods with irradiation dose, temperature and atmosphere as the parameters for the experiment. The effectivity of irradiation for containing the food-borne pathogen was demonstrated.
