Healthy eating trends have caused the market to fall between 1991 and 1995, but more optimistic trends are emerging with an increase in snack and indulgence eating. The cream market is dominated by fresh cream with an 80.2% value share. The 5.11 billion pounds sterling dairy products market is very fragmented, with no single company having a greater than 20% share, but leading players include Eden Vale and St Ivel. Sales of cream are forecast to reach 122 million pounds sterling by 2000.

Around 70% of the market is accounted for by fresh cream. Cream sales are expected to decrease in the long-term, with the emphasis on health and low-fat foods, particularly among the young. Own-label products dominate the market, accounting for almost 75% of total sales. Among the leading players in the market are the New Zealand Dairy Board's Anchor Foods Ltd., Nestle (UK) Ltd. and Dairy Crest.

The United Kingdom retail market for milk fell 1.4% by value to 3.08 billion pounds sterling in 1993. The falling value is partly attributed to purchasing of larger packs via retailers. Consumption fell 0.5% by volume to 5.62 billion litres in 1993, with further decline predicted. Low-fat milk varieties accounted for 52% of the liquid milk market.
