Sauces & dressings in France

Article Abstract:

A number of trends are observed in the French sauces and dressings market. The market was valued at over 2.7 billion francs and grew by 13% in volume and 25% in nominal value between 1989 and 1993. Vinegar had the biggest market share at 45%, while mayonnaise was largest value sector with a 27% share. The ketchup sector also exhibited the largest growth, with a 54% and 47% increase in volume and value, respectively. Profiles of major manufacturers are presented.
