Researcher forecast that the UK milk sector will maintain its value. Volume sales of milk remained constant from 1991 to 1995 at around 5,900 million litres per year, although the sales value increased by only 2.2% over the period. Multiple stores increased their share of the retail market from 20% in 1991, to 51% in 1995, with doorstep sales declining from 66% to 45% of the market over the same period. There has been a considerable amount of corporate activity in the milk processing industry, but Northern Foods PLC maintains market leadership with a 20% share of volume sales in 1995.

Sales of both butter and cream are expected to fall over the next five years in value and volume terms.
