Scientists have discovered that a fibrous component of shellfish actually prevents fat from being absorbed by the body and its chemical property acts as a powerful weight-loss drug, called chitosan. This super-fiber is one of the most abundant polysaccharides, a type of carbohydrate and is found in everyday foods, including bananas, mushrooms and grains, while the richest sources are the shells of crabs, shrimp and other crustaceans.
