Measurement of volatile thiol constituents in food is a major challenge in the high impact aroma chemicals market. Oxford Chemicals together with the University of Durham has developed a thiol determination technique that is reproducible and simple. The mechanisms and application of the new essay based on Ellman's reagent is discussed.
