How homogeneous are the trehalose, maltose, and sucrose water solutions? An insight from molecular dynamics simulations

Article Abstract:

The structural properties resulting from the reciprocal influence between water and three well-known homologous disaccharides, trehalose, maltose, and sucrose, in aqueous solutions are investigated by means of molecular dynamics computer simulations. Hydration numbers clearly suggest that trehalose binds to a larger number of water molecules than do maltose or sucrose, thus affecting the water structure to a deeper extent.

Analysis of the diffusive properties of Vitamin C aqueous solutions by quasi elastic neutron scattering. 1

Article Abstract:

The analysis of the diffusive properties of L-ascorbic acid (vitamin C) aqueous solutions using quasi elastic neutron scattering (QENS) is presented. Results indicate that the strong solute-solvent interactions capable of slowing down the dynamics of the water molecules, which are not closely connected with vitamin C molecules takes place.

Solvent polarity across weakly associating interfaces

Article Abstract:

The changes in solvent polarity across weakly associating liquid/liquid interfaces was examined using the molecular ruler surfactants, solvatochromic probes of solvent polarity. The results of the examination correlate with each organic solvents ability to pack and associated free volume.
