A comprehensive overview of scientific activity concerning multivariate autofluorescence of intact food systems is provided, focusing on the paradigm shift in industrial quality control by the introduction of process analytical technology where fluorescence sensors provide valuable fingerprinting information of process streams and reactions. Examples of current applications of autofluorescence measurements in different fields of food analysis are presented.
