When the bubbles burst

The boom in the champagne industry ended when the British economy slid into a recession in the 1990s. Considered a luxury item, champagne enjoyed strong growth in the prosperous decade of the 1980s when people used it to proclaim their success and wealth. The market began to decline as a result of the economic downturn and as well a number of disastrous mistakes made by winemakers themselves. With demand outpacing supply, many vintners tried to produce more non-vintage champagne by pressing grapes up to three times, resulting in a marked decline in quality. Many also shortened the ageing time of their wines, thereby producing 'green' or immature champagnes. Because of these practices, the wine industry came under heavy criticism from consumers and the media. Increased competition from foreign winemakers has added to the industry's problems. Venerable champagne house Moet & Chandon started a campaign to regain consumer confidence in the champagne industry by convincing other vintners to comply with quality standards.

Mussel bound
Article Abstract:
International recipes for mussels are presented. They include mussel power, herbed Italian mussels, mussels and rice, mussels with fresh tomatoes, Portuguese mussels and curried island mussels. Mussels that smell fishy are not fresh.
