Delicatessen meats

Article Abstract:

The UK market for delicatessen meats (including ham and bacon) was worth around 1.8 billion pounds sterling in 1994, with volume reaching 414,000 t. The overall market is dominated by bacon sales, with a 52% value share and a 57% volume share. One of the most dynamic segments has been Continental-style sausage, up 22% in value and 14% in volume in the period 1990-94. Some 70% of the sector's value sales are accounted for by multiple grocers, with their in-store delicatessens taking market share from traditional butchers. It is forecast that the market for delicatessen meats will grow from 1.84 billion pounds sterling in 1995 to 1.86 billion pounds sterling by 1999.

Red meat

Article Abstract:

The UK retail market for red meat will decline 5% at current prices to 3,091 million pounds sterling by 2001 from 3,250 million pounds sterling in 1997. Pork sales will rise by 6% at current prices to 998 million pounds sterling in 2001 from 940 million pounds sterling in 1997, due to greater consumer confidence. Red meat sales have declined to account for 31% of the total meat market in 1996 from 34% in 1992. Beef sales have been adversely affected by consumer health concerns over Bovine Spongiform Encephalopathy, with just 40% of consumers surveyed believing beef derivative products are safe to eat.

Sausages and meat pies

Article Abstract:

The United Kingdom combined market for meat pies and sausages grew 8% to 980 million pounds sterling during 1990-1994, with meat pies accounting for 56% of the market by value. The combined market will remain unchanged during 1995-1999, with the market for sausages falling 8% by value while the market for meat pies will increase 6% by value. Almost 66% of housewives served meat pies in 1994, with 90% serving sausages. The market for premium products is growing although the market has generally been adversely impacted by the trend towards healthier lifestyles.
