Article Abstract:

White truffles, a very expensive and rare food, are described in detail, including their aroma, taste, culinary uses, growing conditions, cultivation, harvesting and chemical properties. The different ways of creating imitation white truffle products are discussed. A taste test of 30 truffle surrogate products including oils, pastes and butters is presented. The taste and aroma of truffle surrogate products is compared to that of real ripened white truffles.
