Chef Jean-Marie Lacroix is opening a new restaurant, the best to open in Philadelphia, by signing on with the Four Seasons' nearby competitor, The Rittenhouse Hotel. The kind of energy and exuberance, which younger chefs might envy or emulate, is exhibited by a rather shy Lacroix, which says much about his basic geniality and immense talent as an innovator.
