The Roman Catholic churches of the Diocese of Owensboro, Kentucky have barbecues at church festivals and fund-raisers and socials throughout the year with more than 80,000 attendees. Their specialty for barbecue is mutton, which comes from a fully-grown sheep and is more flavorful and spicy than pork and goes very well with dips, sauces, and rubs.
