Sour cherries

Article Abstract:

Sour cherries have their special taste which complements certain kinds of dishes, such as the French duck recipe caneton Montmorency. When the cherries are fresh, they make a delicious clear, light preserve. They are excellent for pie but require cornstarch because of the abundance of juice.
