Sausage can be part of a low-fat diet because dieters only need to add small amounts of sausage to dishes to make them more flavorful. Sausage recipes are presented, including recipes for warm lentil salad with kielbasa and corn-and-chorizo-stuffed peppers.

A low-fat version of a dish called Chicken Cannelloni Genovese, served by Hot Tomato's restaurant in Hartford, CT, is presented. The recipe includes crepes, filling and sauce. The new recipe uses fewer egg yolks, less chicken, less cream and more spinach.
