Physical properties of polysaccharides in food
Article Abstract:
The physical properties of polysaccharides, naturally occurring carbohydrate polymers, can be determined by nuclear magnetic resonance spectroscopy and measuring the longitudinal and transverse relaxation times of polysaccharide water systems. The polysaccharides act as gelling agents and, in food gels, the polymer molecules are observed to be cross-linked by weak intermolecular attractions. An estimation of the dynamic parameters of water provide the characteristics of gels.

Could a satellite-based navigation system (GPS) be used to assess the physical activity of individuals on earth?
Article Abstract:
A satellite-based navigational technique called the American global positioning system (GPS) was employed to predict the velocity of walking and running in humans. Results have shown that a significant relationship was obtained between the speed directly calculated by chronometry and that measured by GPS in both walking and running conditions. The advantages and disadvantages of utilizing the GPS system were enumerated.
