The Food and Drug Administration's decision to require the fortification of grain-based foods with folic acid was intended to prevent birth defects, but folic acid may also reduce the levels of homocysteine in the blood. High levels of this substance has been linked to cardiovascular disease.

Vitamin K is not only an essential factor in blood clotting but also plays an important role in bone health. Low intake of Vitamin K is known to be associated with incidences of hip fractures in elderly men and women.
