A recipe for frico from a New York, NY, restaurant and a recipe for black pepper pasta with mushroom-gorgonzola sauce from an Omaha, NE, restaurant were modified to reduce the amount of fat and calories. The recipes call for asiago, montasio or gorgonzola cheeses.

Seafood recipes can be delicious as well as low in fat and calories. Four winning recipes from the Alaska Seafood Recipe Contest are salmon-stuffed ravioli, Juneau jambalaya, Oriental crab salad and sugar-spiced Alaska salmon with mango salsa.
