Hanukkah celebrations are not complete without innovative fresh food recipes that include potato latkes. A veal roast with raisin pesto stuffing and potato latkes can have a 75% reduced fat content that includes a 50% reduction in sodium. Calories are lowered from 542 to 285 for three oz. of veal and three latkes.
