Genoise, three ways

Article Abstract:

Genoise, an ethereal sponge cake popular in European and French pastry-making, seems to change character depending upon the pan in which it is baked, the way in which it is cut, and the filling and syrup with which it is enhanced. The three general forms of genoise are a chocolate torte, a free-form lemon-blackberry roulade, and a sunny-tasting tropical-fruit dessert.
