Mardi gras in Cajun country

Lafayette, South LA hold grand parades and pageants, regal kings and queens during the mardi gras festival. The city also holds its biggest soiree to the public, for free on Tuesday nights. The rural Louisiana communities, on the other hand, provide the best getaway from the city scene.

Take your thyme

Thyme can be easily mixed with butter, mayonnaise and other dressings for added flavor. It can also be used to perk up the flavor of seasonings and sauces. Recipes for shallot-thyme sauce, thyme mayonnaise, thyme-potato bake, thyme-lemon butter and Jamaican jerk chicken are presented.
