Twenty-one varieties of radishes are described, and days to maturity are given. Some are winter growers and others early, Rattail is a radish variety which produces a foot long edible seed pod. A brief history of the radish in European cuisine is presented. Tips are given on raising radishes.

Root crops such as parsnips, turnips and rutabagas are a great source of vitamin C in the winter. They should be grown in loose soil with a pH of 6.0 to 6.5. Potassium is important to root crops, and wood ashes should only be used on acid soil.
