The methods used and the plants grown in four historic gardens are described. Techniques for such as blanching asparagus are still valid. The two-acre garden at Monticello, the farm owned by Thomas Jefferson, had 27 beds for growing roots. Forced labor came from enslaved Africans and their progeny.
