The Mississippi Delta hot tamale trail
Article Abstract:
Tamales, the delicacy from the Mississippi Delta has been a portable food of war parties and field workers for millennia and in restaurants, on street corners and in kitchens throughout the Delta. This very old and time-consuming culinary tradition has remained. In the 21st century, the tradition of tamale-making is prevalent among African Americans in the Delta and though over the years the original recipes have changed it has endured the passage of time in this part of the American South.

Culinary resources of the historic New Orleans Collection Library
Article Abstract:
Television programmes on cooking, food movements to preserve traditional cooking methods and food studies as a fast-growing discipline in academics have led to increased interest in cookbooks. The Historical New Orleans Collection (THNOC) library has responded with The Rochester Clarke Bibliography of Louisiana Cookery, which provides information on early food pathways, trends in cookbook publishing and the foodstuffs that formed the basis of the regional cuisine of Louisiana.

Article Abstract:
Three is the magic number not only in religious and secular matters but also in the foodways of the American South. The magic of three is visible in matters culinary when applied to the mixing of the three cultures Native American, European and African traditions in the American South, which has resulted in a variety of delicacies.
