Water of life: seeking the source of single-malt Scotch

Article Abstract:

Single-malt Scotch is made from barley that is 'soaked' or malted in water. This makes it sprout partially before it is dried over peat fire to stop the sprouting process. The key to a fine Scotch is in its distilling and resulting color, nose, body, palate and finish qualities.
