Foo, raised in Taiwan, uses only Western-style pots in her kitchen so that things will cook evenly. She uses this judicious blending also in her cookery. Recipes include duck dumpling with persimmon chutney, braised sea bass, roasted squid with Sichuan-peppercorn marinade, and new potatoes goo lai.
