Science has become the neutralizer of Americans' penchant for high-fat, sugar-rich food. Food fads such as fat substitutes, saccharin and vitamin-fortified snacks and drinks satisfy their need for proper nutrition and make them feel less guilty when they gorge on food loaded with fat and cholesterol.
