Effects of lamb age, muscle type, and 24-hour activity of endogenous proteinases on postmortem proteolysis
Article Abstract:
The effects of age, muscle type and activities of proteinases such as calpastatin on protein degradation after slaughter were determined in lambs. Analysis of postmortem myofibrilar fragmentation index (MFI) from the different muscles of 8- and 26-week lambs revealed that less protein degradation occured in the supraspinal muscle and that MFI values were greater in older lambs. Results indicate that the degree of proteolysis is lower among younger and more oxidative muscles. This is probably due to higher calpastatin activity.

The effect of postmortem time of injection and freezing on the effectiveness of calcium chloride for improving beef tenderness
Article Abstract:
A study was conducted to determine whether the postmortem injection of calcium chloride tenderizes meat to the same extent as it tenderizes prerigor meat. The study also looks into the effects of freezing and thawing meat before and after calcium chloride injection. Results show that calcium chloride tenderizes postrigor and prerigor meat to the same extent and that no additional tenderization is provided with freezing the meat first, then thawing and injecting with calcium chloride.

Rapid communication: A polymorphic microsatellite in the promoter region of the bovine Calpastatin gene
Article Abstract:
Results demonstrate that calpastatin and the microsatellite map on to the bovine chromosome 7. Data point out that identification and localization of this microsatellite helps in the functional characterization of calpastatin.
