Analysis and dynamics of the chromosomal complements of wild sparkling-wine yeast strains

Article Abstract:

The dynamics of the chromosomal complements of wild sparkling-wine yeast strains have been analyzed using specifically designed selection protocols. To this end, Saccharomyces cerevisiae yeast strains that can carry out the second fermentation of sparkling wine from spontaneously fermenting musts in El Penedes, Spain, were isolated. All strains exhibited one of two very similar mitochondrial DNA restriction patterns, while their karyotypes varied. The strains also had high rates of karyotype instability, which depend on both the medium and the strain, during vegetative growth,

Molecular polymorphism distribution in phenotypically distinct populations of wine yeast strains

Article Abstract:

Mitochondrial DNA (mtDNA) restriction analysis and electrophoretic karyotyping of natural yeasts from fermenting musts in El Penedes, Spain indicate a large amount of polymorphism revealing heterogeneous populations. Genetic analysis indicates a relationship between mtDNA polymorphisms and the selected phenotypes. Most of the heterogeneity occurs in clones with different mtDNA patterns but some clones from different fermentations, with the same mtDNA pattern also show heterogeneity.

Karyotype rearrangements in a wine yeast strain by rad52-dependent and rad52-independent mechanisms

Article Abstract:

Research points out of the three possible mechanisms operating toward karyotype instability in wild yeast strains, two do not involve RAD52 gene-mediated homologous recombination. Disruption of RAD52 gene eliminates recombination at telomeric and subtelomeric sequences.
