Proteomics in the kitchen

Article Abstract:

Muscle proteomic profiles of farm-raised rainbow trout (Oncorhynchus mykiss) that engaged in strenuous muscular activity for 15 minutes before death were compared with trout that did not, to study the effects of this preslaughter muscle activity on the food quality. It was suggested that the activity can lead to low-quality skillets, although experts believe that many variables like the food the fish ate, the sex of the fish and the time of the year can influence the quality of fish.
