Analysis of the UK retail market for frozen fish reveals that sales have grown to 131,000 tonnes in 1996. This represents an increase of 9.2% since 1992, and the forecast is for further steady growth. However, analysts expected more growth considering the publicity given to healthy eating options. Frozen fish sales in 1996 were worth 534 million pounds sterling. Birds Eye Walls Limited is the market leader, with a 27% value share of the market, and own-label products account for 51% of sales. Profiles of leading manufacturers are included, together with details of the overall frozen food market.

The UK cakes and pastries market grew from 1,995 million pounds sterling in 1993 to 2,378 million pounds sterling in 1997. The cake sector accounted for 54.8% of the total value in 1997, with individually-wrapped cakes the largest sector of the cake market with 38.9%. The cake and pastries market is expected to increase in value to 2.695 million pounds sterling by the year 2002. Convenient speciality cakes will provide much of the market growth.
