Motorway restaurants represented 72.5% of total value in the travel catering sector of the French consumer catering market, in 1997. Driven by initiatives by the Association Nationale des Restaurants et Hoteliers d' Autoroute to increase quality and attractiveness of their facilities, motorway restaurants have seen their value sales increase from FF1,689 million in 1993, to FF1,712 million in 1997. The other subsector, rail catering, registered a slight decline in value sales, from FF655 million in 1993 to FF650 million in 1997, for a 27.5% value share in the travel catering sector.

Bars accounted for 63.1% of the total value in the cafes and bars sector of the French consumer catering market, in 1997. The bars subsector, which comprise bars, pubs and discos, has gained from the trend towards themed outlets, as its value sales decline was limited to only 6.9%, from FF15,987 million in 1993, to FF14,876 million in 1997. The cafes subsector, which encompasses tea-rooms and traditional French cafes, registered a more substantial decrease in value sales at 29.2%, from FF12,308 million in 1993, to FF8,717 million in 1997.
