A hedonic price analysis of quality characteristics of Japanese Wagyu beef

Article Abstract:

Japanse food culture and traditional cooking style affect the purchasing decisions of Japanese consumers. For US exporters of Wagyu beef to Japan, knowledge of such food culture and Japanese cooking style is important. For instance, selected carcass characteristics have significant effects on the auction price of Wagyu beef carcasses. This is indicated in a hedonic price analyis of Wagyu beef carcasses.

Competitive product positioning analyses of a lean beef product concept

Article Abstract:

A study was conducted to evaluate the feasibility of favorably positioning a branded lean beef product in a market characterized by confusion about the nutrient content of various meat products. The results show that the use of educational materials was effective in favorably positioning the lean beef product against other traditional meat products.

Retailers' response to wholesale price changes: new evidence from scanner-based quantity-weighted beef prices

Article Abstract:

A perceived slow response of retailers in retail prices to changes in wholesale beef prices as indicated by the traditional Bureau of Labor Statistics (BLS) measures is examined. Evidence from scanner-based quantity-weighted beef prices reveals that retailers' response is larger and quicker than suggested by the BLS measures.
