'Alternative' species in hot demand: go global

Article Abstract:

Advance technologies in shipping and transportation have brought a new supply of quality seafood to the market. Demand for new alternative fish species continues to grow in foodmarket. Examples include tilapia, tilefish, wahoo, hoki and skate. Commercial restaurants have an opportunity to do experiments with these new-wave seafood species and can command a high menu price for it's exotic taste.
