Why the French get away with it

Article Abstract:

The French are second only to the Japanese in terms of immunity to heart disease despite their high-fat diet and high alcohol intake. Although consumption of fatty foods in France and the UK does not differ significantly, but alcohol intake is much higher in France, the British are 25% more likely to succumb to a heart attack than the French and are in fact next only to the Finnish and the Irish in their susceptibility to heart disease. British scientists have been trying to solve this puzzle for years. It has been proposed that the French diet is healthier even it is high in total fat because it has lower saturated fat and milk-derived fat. In addition, the French take their alcohol with their meals and spread evenly throughout the day instead of drinking on an empty stomach.
