Caesar rules

Article Abstract:

The classic Caesar's salad was invented by Caesar Cardini in 1924, and was made of hearts of romaine, mashed garlic, a coddled egg, olive oil, lemon juice, Worcestershire sauce, grated Parmesan cheese, croutons, and salt and pepper. Restaurants today have taken great liberty with the classic, adding unconventional ingredients ranging from polenta croutons to fried oysters.

Issues are presented concerning the use of bacon to improve the flavor of a variety of dishes from cheeseburgers to soups. The use of specialty bacon, such as spicy or smoked, is discussed together with issues pertaining to the fat content of the product.
