The author talks about Odessa Piper, the chef-owner of L'Etoile Restaurant in Madison, Wisconsin and her love and use of fresh produce. There is also a recipe for rainbow trout with apple pearls and lemongrass and one for squash blossoms that are fried then drizzled with a rice vinegar vinaigrette.
