Salmon is delicious, inexpensive and full of vitamins. When buying salmon, farmed fish is less tasty than native fish, and the meat near the tail has few bones. Recipes for marinade are given, along with tips on cooking fish on the grill or in the dishwasher.

The fire eater

Flambe involves pouring liquor into a cooking pan and igniting it to help cook the food. An easy recipe to get started in flambe is shrimp sauteed in fennel and Pernod liqueur. A recipe for banana flambe is also provided.
