Effect of antioxidant vitamins on the transient impairment of endothelium-dependent brachial artery vasoactivity following a single high-fat meal

Article Abstract:

A high-fat meal appears to adversely affect the lining of blood vessels, which could explain the link between fat and coronary artery disease. Researchers used ultrasound to measure dilation of blood vessels in the arm in 20 healthy volunteers after a high-fat meal, a low-fat meal, and either meal including vitamins C and E, which are anti-oxidants. Blood vessel dilation fell from 20% to about half that amount within two to three hours of a high-fat meal. No change in blood vessel dilation was seen after a low-fat meal or either meal that included the vitamins. This indicates that free radicals may be responsible for reducing blood vessel dilation.
