Heaps of hot peppers!

More prolific pepper production depends on the varieties grown as well as gardening techniques. Pepper expert Paul Bosland's recommended varieties include Tarahumara, Numex Joe E. Park, Inferno and Rocoto. Tips include planting seeds indoors in January, avoiding nitrogen overdose and weed control.

Feeling hot, Hot, HOT: the fiery taste of chili peppers

Article Abstract:

Alkaloid capsaicin is the souce of heat in chili peppers, although the capsaicin itself has little distinct flavor and the different physical structures can cause a variety of sensations. Experts advise the use of dairy products in taking heat away from the mouth when eating chili peppers.

Flavor with peppers

Article Abstract:

Fresh peppers add colors and flavors to dishes. Examples of peppers are the chubby bell peppers, serrano and the jalapeno. Recipes for red bell pepper soup, Memphis-style coleslaw, Sancho Chile Succotash with serrano Chile polenta are presented.
