Low-fat versions of classic Louisiana recipes are presented. Oven-toasted flour substitutes roux in Seafood Gumbo, while Crawfish Fettuccine uses skimmed milk and reduced-fat cheese spread. Bananas Foster cuts down on butter and sugar and replaces ice cream with nonfat frozen yogurt.
