The role of ethnic foods in the food and nutrition curriculum

Article Abstract:

Senior students of a multicultural food and wine course in a consumer food service curriculum were surveyed as to their backgrounds, understandings and attitudes on the subject matter. The results showed that the seniors did not have adequate background on the different cultures taught including geography, travel and foreign languages. The curiosity to independently learn more about the cultures was also lacking. Thus, it seems that senior university students need to be more aware of cultural diversities.

What do pregnant adolescents believe about nutrition during pregnancy?

Article Abstract:

Pregnant adolescents were studied to assess their beliefs about dietary requirements during pregnancy. The results indicated that while adolescents were aware of the medical recommendations related to weight gain and milk intake, misconceptions regarding issues related to salt intake, vitamin supplementation and the maternal-fetal nutrition relation were common. Since 20 percent of all infants are born to adolescents, providing nutritional counselling to pregnant adolescents is essential.

Readability of recommended nutrition sources

Article Abstract:

A study was conducted to determine whether the nutrition and food publications recommended to consumers by the Alaska State Nutrition Committee and the American Dietetic Assn pass the Flesch readability test. The test measured the readability and human interest appeal of 32 books. Results revealed that 50% of the books analyzed could be understood by 10th-grade level readers while 25% could only be comprehended by readers with post-secondary education.
