The retail flour market has been declining due to the ever-increasing demand for convenience. Savoury mixes account for 52% of baking mix volume, while self-raising flour is responsible for 52% of flour market volume. The three companies leading the market are Kerry, Tomkins and ABF. Intense competition between own-label products contributed to the decline of flour prices. Prospects for the market are bad, although the rate of decline is expected to slow after 2000.

Broadcasters appear powerful to composers whose music they use. Channel 4 commissioned six operas requiring collaboration, but BBC2's Annette Moreau asked composers to choose their directors. Steve Martland is a composer who takes control of his own broadcasts. Baldwin, a film-maker who trained as a visual artist, realised the power of music when using it in his films. Artists at the Brighton conference on broadcasting stated their importance to broadcasting.
