The ice-cream market is continually expanding because of new products and investment in advertising. The profit on soft serve ice cream from machines is 70%, versus 30% for packaged products. Ice-cream retailers need to determine the quality of ice-cream to sell, the type of customers, and the labour involved when deciding on what to stock. Children's consumption accounts for 40% of sales. The market for teenage consumers has risen with the introduction of more products, with Bizz from Wall's leading sales. The adult market is more difficult to track.

There are a number of ways in which leisure managers can ensure that sales of ice cream products are maximised. The most effective way to sell ice cream is by count line products from a conservator cabinet display, but margins are generally lower than with soft serve ice cream or a scooping cabinet. Leisure retailers should ensure that they offer a mix of cheap and expensive products, as profit levels from cheap products tend to be low. Many manufacturers have launched new products recently, and these target different budgets and age ranges.

However, a high-quality customised product is achievable with staff input. Ice cream may be soft served or scooped. Good quality ice cream is essential for scooping. Limitless dessert combinations are possible with a variety of toppings and accessories.
