The great outdoors: packing a patio requires more than just warm weather

Article Abstract:

Outdoor restaurateurs need more than warm weather and word of mouth as marketing tools to ensure patronage for their patios. They are faced with problems such as exhaust fumes and insects while customers are eating al fresco. The biggest challenge, therefore, for outdoor restaurateurs is making their guests comfortable and maintaining the same level of service in the dining room. Also, a sense of fluidity should be maintained between the dining room and the patio.
