In Europe, there is Le Petit Blanc Ecole de Cuisine in Oxford, England and Burgundy, France's La Varenne. Central America, Australia and Asia as well as the US also have their own.

Cowboy turned cowboy cook Grady Spears is one of the owners of the Reata restaurant in Fort Worth, TX. Fort Worth locals come to Reata not only because of the fine food but also because the restaurant features Remingtonesque murals, cowhide chairs and attractive saloon-like bars.

Cajun, Creole, or just Louisiana cooking?

Article Abstract:

Cajun and Creole cooking have different and similar traits. Cajun originates from the French settlers, and Creole has elements of French, Spanish, African, Italian and other peoples. Cajun is more down-to-earth and Creole is more gourmet French. Examples of dishes are given.
